Dabeli is a popular Indian street food that originated in the Kutch region of Gujarat and has become a favorite across many parts of India. The word “Dabeli” means “pressed,” referring to the way the flavorful filling is pressed inside a soft bun (pav). It consists of a spicy, sweet, and tangy potato mixture flavored with aromatic dabeli masala, layered with chutneys, crunchy peanuts, fresh pomegranate seeds, and sev, then lightly butter-toasted. The delightful combination of textures and flavors makes dabeli a delicious and irresistible snack enjoyed by people of all ages
Ingredients
For the Potato Filling
2 medium potatoes, boiled & mashed( Carisma potatoes – a low GI variety for diabetics and health conscious)
2 tbsp oil or butter
3 tbsp dabeli masala( recipe uploaded on this website seperately)
tsp. of red chilli powder
3 tablespoons tamarind water
Salt to taste
Toppings
½ cup roasted masala peanuts
½ cup nylon sev
½ cup pomegranate seeds
Finely chopped onion (optional)
Fresh coriander
Tamarind water
200 gm of tamarind soaked in 500 ml water for 30 minutes. Filter out the tamarind seed covers and retain the water. Then take a teaspoon of oil in a pan . Add a teaspoon of red chili powder, 2 teaspoons of dabeli masala. Add the tamarind water. Adjust the salt. let it simmer for 10 minutes.
Red chilli garlic chutney
In a mixer jar add 20 garlic cloves, handful of roasted peanuts, 3 teaspoons of Kashmiri red chilli powder. Add 2 teaspoons of water. Grind coarsely. lastly add salt according to your taste.
For Assembly
4–5 pav/burger buns
Butter/oil for toasting

Instructions
1. Make the Filling
Heat oil/butter in a pan.
Add dabeli masala and splash of tamarind water. Let it simmer for few seconds
Add red chilli powder mashed potatoes and salt(If needed)
Cook 2–3 minutes until flavorful and soft
2. Prepare the Buns
Slice pav horizontally without separating completely.
Spread tamarind water on one side and red chilli garlic chutney on the other.
3. Stuff & Top
Fill generously with the potato mixture.
Add peanuts, onions, pomegranate, coriander, and sev.
Again coat with sev and pomegranate
4. Toast
Heat butter on a tawa/pan.
Toast the stuffed dabeli until golden on both sides.
Tips
Use lots of butter for authentic street-style flavor.
Nylon sev gives the best texture.
Sweet chutney balance is key — dabeli should be spicy, sweet, and tangy together.
You can prepare the potato filling a day ahead.
Serving Suggestion
