Browntop millet dosa

Browntop millet(hari kangni in hindi) dosa is a wholesome and nutritious South Indian-style dosa made using fiber-rich browntop millet instead of regular rice. It has a mildly nutty flavor, crisp texture, and is easy to digest. Rich in iron, calcium, and antioxidants, this dosa is a great option for a healthy breakfast or light dinner. Pair it with coconut chutney, tomato chutney, or sambar for a complete meal.

Ingredients

3 cups browntop millet
3/4 cup urad da
1 tsp methi seeds
Salt to taste
Water as needed
Oil or ghee for roasting

Instructions

Wash browntop millet thoroughly 2–3 times.
Soak millet separately for 6 hours.
Soak urad dal and methi seeds for 6 hours.
Grind urad dal, methi seeds mixture into a smooth fluffy batter using little water.
Grind browntop millet into a slightly smooth batter.
Mix both batters well in a large bowl. Add salt lightly if preferred after fermentation.
Ferment the batter overnight or for 8–10 hours in a warm place.
Add salt and mix gently.
Heat a dosa tawa and spread a ladleful of batter in circular motion.
Drizzle oil or ghee around the edges.
Cook until golden and crisp. Flip if needed.

Serve hot with chutney and or sambar.
