Eggless Mayonnaise

Ingredients
  • 1 cup cashews
  • 1/4 teaspoon olive oil
  • juice of a lemon
  • 1/8 teaspoon pepper powder
  • pinch of pink salt
  • salt to taste

Instructions

Soak cashews in 2 cups water for an hour.
Drain the water and pat dry the soaked cashews with a dry cloth.
Combine cashews with all the above ingredients except salt.
Transfer to a mixer jar. Pulse to get a paste like consistency . Finally add salt according to your taste. 
Pulse in mixer for 5 to 6 times, till you get an emulsion . Depending on the quality of cashews you might have to add extra olive oil to get the runny consistency.
The mayonnaise  is ready and can be used up to a week when stored in refrigerator .
