Kesar Shrikhand

Shrikhand is a luscious, creamy dessert from Western India, especially beloved in the states of Maharashtra and Gujarat. It’s made by straining yogurt to remove whey, then blending the thickened curd with sugar, saffron, cardamom, and sometimes nuts or fruit pulp like mango , sitaphal.

 References to shrikhand appear in Sanskrit texts as shikharini, dating back to around 500 BC.According to legend, Bhimsena (from the Mahabharata) was an expert cook who first prepared it. Lord Krishna is also said to have enjoyed it regularly. It is a staple in festive meals and thalis.

Here’s a simple and delicious Shrikhand —a creamy, chilled dessert made from strained yogurt, sugar, saffron, and cardamom. Perfect after a hearty Indian meal or paired with puris!

Ingredients
  • Greek yogurt or hung curd: 1 cup
  • Powdered /fine sugar: 3–4 tablespoons (adjust to taste)
  • Saffron strands: A pinch (about 10–15 strands)
  • Cardamom powder: ¼ teaspoon
  • Chopped nuts (pistachios, almonds),
  • rose petals : 1 tablespoon (for garnish)

Instructions
  1. Prepare the yogurt
    If using regular curd, strain it in a hung curd maker or tie it in a muslin cloth for  4–5 hours or overnight to remove the whey and make hung curd. Greek yogurt can be used directly.
  2. Mix the base
    In a bowl, combine the hung curd or Greek yogurt with whole fine sugar or powdered sugar. Whisk until smooth and creamy.
  3. Add flavor
    Mix in the saffron, cut dry fruits and cardamom powder. Stir well to blend the flavors.
  4. Chill and serve
    Refrigerate for at least 30 minutes. Serve chilled, garnished with chopped nuts ,rose petals and a few saffron strands
