Here is purple yam stuffed tacos. This boiled form of yam along with fresh green masalas is stuffed in a plain paratha or chapati making it a nutritious filling dish for breakfast or lunch or dinner.

Ingredients
300 gm purple yam
2 teaspoons oil
6 parathas
Fresh cut coriander and bhel bhujia for garnishing
Green masala
1/2 cup of groundnuts
1/2 cup green coriander
1/2 cup dry or fresh grated coconut
1/2 cup garlic cloves, ginger, green chillies ( in any proportion )
1/4 cup sesame seeds
1/2 teaspoon lemon juice
salt to taste
1/8 tsp hing

Instructions
1.Clean the purple yam, peel off the skin, and cut it into small pieces.
2.Pressure cook the yam pieces until soft, taking care that the pieces ratain shape and not too muuch mushy.
3.Grind all the green masala ingredients into a coarse mixture.
4.Heat oil in a pan. Add hing and sauté the prepared coarse green masala.
5.Add the boiled yam pieces and lightly mash them. Cook until the yam is evenly coated with the masala.
6.While the mixture is warm, stuff it into the paratha. Sprinkle with fresh coriander and bhel bhujia.
7.Serve immediately
Notes
The purple yam used in recipe can be replaced by any other starchy tuberous root like potato or yam etc.
