Dal Wada

Dalwada is a famous Gujarati street food, especially popular in Ahmedabad and Surat. Perfect for a rainy day! These crispy fritters are made from split green gram (chana dal) blended with spices and herbs, then deep-fried until golden. Traditionally enjoyed with fried green chillies and chutney, dalwadas are loved for their crunchy bite and spicy flavor.

Ingredients
  • 1 cup chana dal (split Bengal gram) – soaked 3–4 hrs
  • ¼ cup yellow moong dal ( split yellow lentil dal) – soaked 3 to 4 hrs
  • 2–3 green chillies chopped
  • 1 tbsp garlic chopped
  • ½ cup fresh coriander leaves
  • 8–10 curry leaves
    ½ tsp each fennel seeds (saunf),
  • coriander seeds(coarsely crushed)
  • ½ tsp ajwain (carom seeds) (coarsely crushed)
  • 1 tsp black peppercorns (coarsely crushed)
  • Salt to taste
  • Oil for deep frying

Instructions
  1. Soak chana dal , yellow moong dal 3–4 hours. Drain well.
  2. Coarsely grind dal with garlic, chillies, and curry leaves (don’t make a smooth paste). 
  3. Mix in coriander, saunf, ajwain, pepper, and salt.
  4. Heat oil. Drop small portions of batter, fry on medium flame until golden, crispy from outside and well cooked from inside.
  5. Serve hot with green chutney and fried green chillies.
