Sukhdi

Sukhdi, also known as Gur Papdi or Gol Papdi, is a traditional Gujarati sweet made from just three wholesome ingredients — wheat flour, jaggery, and ghee. This simple yet nourishing sweet is often prepared during festivals, winters, or as a quick energy booster for children. Loved for its rich aroma and melt-in-mouth texture, Sukhdi is not only delicious but also packed with warmth and nutrition from ghee and jaggery. Ingredients
  • Whole wheat flour (atta) – 1 cup
  • Ghee – ½ cup
  • Jaggery (grated) – ¾ cup
  • Cardamom powder – ¼ tsp (optional)
  • Chopped nuts (cashews, almonds) – 2 tbsp (optional)
  • 2 tsp warm milk

Instructions

Roast the flour:
Heat ghee in a heavy-bottom pan.
Add wheat flour and roast on low-medium flame, stirring continuously.
Roast until it turns golden brown and gives a nutty aroma (around 10-12 mins). Shown in picture below. This is main step. 

Add jaggery:
Lower the flame. Add grated jaggery to the roasted flour.
Mix well until jaggery melts completely and blends with the flour.
Add 2 spoonfulls of lukewarm milk.

Add flavor & nuts:
Mix in some chopped nuts and cardamom for flavor (optional)

Set the sukhdi:
Pour the mixture onto a greased plate or tray.Sprinkle some more chopped nuts.
Flatten it evenly using a spatula.
Let it cool for 20-30 mins.

Vegan version: Use any plant based oil instead of ghee . Proportions and cooking method remains the same.

To make it more nutrient rich, add more dry fruits like dried figs, walnuts etc.
