Guvar ki sabji

Guvar, also known as cluster beans, is a nutritious green vegetable widely used in Indian kitchens. This humble vegetable has a slightly bitter taste, which becomes delicious when cooked with spices, jaggery, or coconut. Ingredients

(Serves 3–4)
250 g guvar (cluster beans), strings removed & chopped
2 tsp sesame ,ajwain seeds
2 tbsp fresh grated coconut (optional but recommended)
2 tbsp roasted peanut
1–2 tsp goda masala
4 cloves garlic

pinch of hing
1 tsp jaggery (adjust to taste)
Salt to taste

For tempering
2 tbsp oil

2 tsp sesame seeds

1 tsp ajwain seeds

½ tsp mustard seeds
¼ tsp turmeric powder
1–1½ tsp red chilli powder

Instructions

Wash, remove strings, and chop guvar into small pieces.
Grind coarsely sesame seeds, garlic, peanuts.
Add Goda masala and red chilli powder and salt.
Heat oil in a pressure pan. Add mustard, ajwain, sesame seeds; let them splutter.
Add Hing, turmeric powder and red chilli powder.
Add chopped guvar. Mix well.
Sprinkle a little water, cover, and cover and cook till 4 whistles until tender.
Open pan lid when pressure has lowered.
Add the prepared masala, jaggery.
Garnish with coconut and coriander leaves.
Mix well and cook for another 2–3 minutes.

Serving Suggestion
Serve hot with jowar bhakri, chapati, or dal-rice
A squeeze of lemon enhances flavor
